Planning your count
Count one per guest for a single course. If salad and dessert both run, and the room is cleared between them, count two. That is the count people get wrong. It is also why this is the deepest piece in the pattern.
Count in bags of twenty, not by the piece. Then the number you give us is the number that arrives. Nobody splits a bag on the truck.
